Cherry Brownie Pudding Cake


Items Required
2 (1-ounce) squares unsweetened chocolate
1 cup sugar
6 tablespoons butter or margarine
2 eggs, separated
1/2 teaspoon peppermint extract
1/4 cup milk
1 cup all-purpose flour
1/2 teaspoon soda
1/4 teaspoon salt
1/3 cup chopped pecans
1 (22-ounce) can cherry pie filling
2 tablespoons lemon juice
Whipped cream topping, and crushed peppermint candy or chocolate shavings
Preparation Method
Microwave chocolate squares in a small glass dish at HIGH 1 1/2 to 2 minutes.
Cream sugar and butter until light and fluffy.
Beat in egg yolks and peppermint extract.
Stir in melted chocolate and milk.
Sift together flour, soda, and salt.
Stir into chocolate mixture.
Beat egg whites until stiff.
Fold egg whites and pecans into the chocolate mixture.
Combine cherry pie filling and lemon juice in a 3-quart baking dish.
Spread chocolate batter mixture over cherry pie filling.
Microwave at HIGH 12 to 14 minutes.
Rotate dish 1/4 turn at 3 to 4 minute intervals.
