Oriental chicken



Item required

21/2 to 3-lb. frying chicken, cut up
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup chicken broth or bouillon*
1/4 cup soy sauce
1 medium onion, cut into wedges
1 tablespoon cornstarch
1 tablespoon sugar
2 tablespoons water
3/4 cup (5-oz. can) drained bamboo shoots 2/3 cup (5-oz. can) drained and sliced water chestnuts
Setting: HIGH

1.    Cut larger pieces of chicken in half for uniform size. In 2-quart (12 x 7) glass baking dish, combine salt, pepper, chicken broth, soy sauce and onion. Place chicken in dish, skin side down: cover.

2.    MICROWAVE for 30 to 32 MINUTES, turning chicken over once. Remove chicken to serving plat¬te r.
3.    Combine cornstarch, sugar and water. Add to juices; cover.
4.    MICROWAVE for 11/2 to 2 MINUTES, stirring once. Add bamboo shoots and water chestnuts.
5.    MICROWAVE for 2 to 3 MINUTES or until hot, stirring once. Serve over rice along with chicken. 4 to 6 Servings

TIP *For bouillon you can add 1 chicken bouillon cube or 1/2 teaspoon instant chicken bouillon to 1/2 cup water.

Microwave Raspberry Cake


Items Required

                         
For Cake                                                                
1/2 c. butter
2/3 c. granulated sugar
1/2 c. seedless raspberry preserves
1/4 c. sour cream
2 eggs
1 1/2 c. cake flour
1/2 tsp. baking soda
1/4 tsp. salt
Greased microwave-safe 8″ dish (such as Pyrex)
For Frosting
2 Tbsp. butter
2 c. confectioner’s sugar
1 tsp. vanilla extract
1/4 c. seedless raspberry preserves



Preparation Method

1. Place butter and sugar in a large bowl, and using a mixer on high speed, mix until creamed.
2. Add preserves, and blend thoroughly.
3. Add sour cream and eggs, then again beat well.
4. In a second bowl, combine flour, baking soda, cinnamon and salt, and mix together well.
5. Gradually add dry ingredients to the first mixture, and blend until smooth.
6. Pour batter into greased dish.
7. Microwave on high power for 4-5 minutes, or until top is springy to the touch. If initial cook time is not sufficient, continue to cook in 30-second increments until fully cooked.
8. Set aside to cool while making the frosting.

For Frosting
1. Combine butter, vanilla extract, preserves, and 1 c. of the confectioner’s sugar to start.
2. Blend well.
3. Slowly add in remaining sugar and stir until smooth.
4. Make sure the cake is cooled, then spread the frosting onto the cake and enjoy!

Microwave Recipes | Easy Quick Healthy Convection Microwave Recipes


Items Required

1/3 cup butter ( or margerine)
1 cup apricot ( chopped)
1 cup peanut (dry roast unsalt)
1/2 cup peanut butter
1 cup raisin
1 pound marshmallows
3 cup cereal (puffed rice )



Preparation Method

In a large bowl, combine cereal, apricots, raisins and peanuts.

In a microwave safe 13×9″, melt butter and marshmallows on high for 2 minutes.

Stir; add peanut butter cook on high 2 minutes longer. Stir until well blended, add cereal mixture to dish and toss until well coated.

Working quickly with greased hand, form into balls, using about 1/2 C mixture, per ball. If mixture begins to harden, cook on high for 30 seconds, or until softened.

If desired , mixture may be spread in unbuttered 13×9″ dish and cooled and cut into bars.

Makes 1 dozen balls or 2 dozen bars

How To Prepare Chicken Breast Cacciato

Items Required

1 (8 ounce) can tomato sauce
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/2 cup cornflake crumbs
1/4 cup grated Parmesan cheese
1 teaspoon dried parsley flakes
6 boneless, skinless chicken breast halves
1 egg, beaten
2/3 cup shredded mozzarella cheese


Preparation Method

1. In a microwave-safe bowl, combine the tomato sauce, Italian seasoning and garlic powder. Cover and microwave on high for 2 minutes; stir. Cook at 50% power for 3-5 minutes or until mixture simmers, stirring once; set aside.

2. In a bowl, combine the crumbs, Parmesan cheese and parsley. Dip the chicken into egg, then roll in the crumb mixture. Place in a lightly greased shallow 3-qt. microwave-safe dish. Cover and microwave on high for 10-12 minutes, rotating a half turn after 5 minutes.

3. Pour tomato mixture over chicken; sprinkle with mozzarella. Cook, uncovered, at 50% power for 3-5 minutes or until meat juices run clear.
